Description

These Healthy Peanut Butter Greek Yogurt Apple Oatmeal Muffins with Chocolate Drizzle are moist, protein-packed, and naturally sweetened. Perfect for breakfast meal prep or a cozy snack.


Ingredients

½ cup peanut butter

⅓ cup Greek yogurt

¼ cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

1 apple, peeled & diced

1 cup oat flour

½ teaspoon baking powder

½ teaspoon cinnamon

2 tablespoons melted chocolate (for drizzle)


Instructions

1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.

2. Whisk together peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.

3. Fold in the diced apple.

4. Whisk oat flour, baking powder, and cinnamon in another bowl.

5. Combine dry and wet mixtures until just mixed.

6. Spoon batter into muffin cups and bake 18–22 minutes.

7. Cool muffins, then drizzle with melted chocolate.
