Description

Soft and chewy peanut butter banana Greek yogurt cookies made with oat flour and naturally sweetened.


Ingredients

Scale

2 ripe bananas (mashed)

1/2 cup peanut butter

1/4 cup Greek yogurt

1/4 cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

3/4 cup oat flour

1/2 teaspoon baking powder

Pinch of salt

1/3 cup chocolate chips (optional)


Instructions

1. Preheat oven to 350°F and line baking sheet.

2. Mash bananas and mix with peanut butter, Greek yogurt, honey, egg, and vanilla.

3. Stir in oat flour, baking powder, and salt.

4. Fold in chocolate chips if using.

5. Scoop onto baking sheet and gently flatten.

6. Bake 10–13 minutes until edges are lightly golden.

7. Cool before serving.

Notes

Do not overbake for soft center.

Use ripe bananas for best sweetness.

Store airtight up to 5 days.
