Description
Soft and fluffy peach vanilla tea cake filled with juicy peach cubes and warm vanilla flavor. Perfect for tea time or dessert.
Ingredients
2 eggs
100 g sugar
100 ml oil
100 ml milk
1 teaspoon vanilla extract
300 g self-rising flour
250 g peaches in syrup diced
peach syrup for brushing top optional
Instructions
1. Preheat oven to 180°C and grease cake pan
2. Whisk eggs and sugar until pale
3. Add oil milk and vanilla extract and mix well
4. Fold in self rising flour until smooth batter forms
5. Gently fold in diced peaches
6. Pour batter into prepared pan
7. Bake 30 to 35 minutes until toothpick comes out clean
8. Brush top with peach syrup while warm
Notes
Drain peaches slightly before adding
Do not overmix batter
Brush syrup on warm cake for extra moisture
Store leftovers in airtight container
