Description
These PB&J Protein Bars combine creamy peanut butter, chewy oats, protein powder, and a sweet layer of strawberry or raspberry jam. They’re an easy no-bake snack that’s perfect for meal prep, busy days, and grab-and-go snacking.
Ingredients
2 cups old-fashioned rolled oats
1 cup creamy peanut butter
1/2 cup vanilla protein powder
1/3 cup honey or maple syrup
1/3 cup milk
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup strawberry or raspberry jam
1 tablespoon chia seeds, optional
Instructions
1. Line an 8-inch square baking pan with parchment paper, leaving some paper over the sides.
2. Add the rolled oats, protein powder, salt, and optional chia seeds to a large bowl and stir to combine.
3. In another bowl, mix the peanut butter, honey or maple syrup, milk, and vanilla extract until smooth.
4. Pour the peanut butter mixture into the oat mixture and stir until evenly combined and the mixture holds together when pressed.
5. Transfer about two-thirds of the mixture to the prepared pan and press firmly into an even layer.
6. Spread the strawberry or raspberry jam evenly over the oat layer.
7. Crumble the remaining oat mixture over the jam and gently press it down.
8. Cover and refrigerate for at least 2 hours, or until firm.
9. Lift the chilled mixture from the pan using the parchment paper.
10. Slice into 12 bars and serve.
Notes
Use creamy natural peanut butter for a smooth texture.
Different protein powders absorb liquid differently, so add a small splash of milk if the mixture seems too dry.
Press the base firmly into the pan so the bars hold together when sliced.
Store the bars in an airtight container in the refrigerator for up to 1 week.
For longer storage, wrap individual bars and freeze for up to 2 months.
