Description

These Pastry Almond Cream Cakes are made with crisp golden puff pastry, toasted sliced almonds, and a smooth vanilla mascarpone cream. Easy to assemble and beautifully elegant, they’re perfect for afternoon coffee, brunch, holidays, celebrations, or any special occasion.

Ingredients

Scale

2 rolls fresh puff pastry

1 egg yolk

Sliced almonds

1 package Dr. Oetker Paradiescreme

300 ml milk

250 g mascarpone

200 ml whipping cream

Instructions

1. Preheat the oven according to the puff pastry package directions and line a baking sheet with parchment paper.

2. Unroll the puff pastry and place it on the prepared baking sheet. Cut the pastry into evenly sized pieces or rectangles, depending on the shape you want.

3. Lightly beat the egg yolk and brush it evenly over the surface of the puff pastry.

4. Sprinkle sliced almonds over the egg-washed pastry, gently pressing them into the surface.

5. Bake according to the puff pastry package directions until the pastry is puffed, crisp, and golden brown and the almonds are lightly toasted.

6. Transfer the baked pastry to a wire rack and allow it to cool completely before assembling.

7. Prepare the Dr. Oetker Paradiescreme with the 300 ml milk according to the package directions until smooth and creamy.

8. In a separate bowl, beat the mascarpone until smooth. Add the prepared vanilla cream and mix until well combined.

9. Whip the 200 ml whipping cream until light and fluffy, then gently fold it into the vanilla mascarpone mixture.

10. Once the pastry is completely cool, carefully cut or separate the baked pieces as needed for layering.

11. Spread or pipe a generous layer of vanilla cream over one piece of pastry, then place another piece of pastry on top.

12. Repeat with the remaining pastry and cream until all the cakes are assembled.

13. Refrigerate the assembled pastry almond cream cakes for about 1 hour so the cream can firm up before serving.

14. Serve chilled, optionally dusted with powdered sugar or accompanied by fresh berries.

Notes

Keep the puff pastry cold while working with it for the best flaky texture.

Follow the baking directions on the puff pastry package because baking temperatures and times can vary between brands.

Don’t skip the egg wash because it gives the pastry a beautiful golden finish.

Watch the sliced almonds carefully near the end of baking because they can brown quickly.

Allow the baked pastry to cool completely before adding the vanilla cream.

Use mascarpone at a cool room temperature so it blends smoothly into the filling.

Whip the cream until light and fluffy, but don’t overmix it after folding it into the mascarpone mixture.

Chill the assembled cakes before serving to help the cream firm up.

For the best texture, assemble the cakes as close to serving time as practical because the cream will gradually soften the puff pastry.

Store assembled cakes covered in the refrigerator.

Enjoy refrigerated cakes within a couple of days for the best texture.

For a simple finishing touch, dust the cakes lightly with powdered sugar before serving.

Fresh strawberries, raspberries, or blueberries make a delicious accompaniment.
