Description

Soft and golden orange raisin scones made with fresh orange zest, juicy raisins, and amasi for a tender crumb.


Ingredients

Scale

8 cups all-purpose flour

10 tsp baking powder

1 cup granulated sugar

500 g baking margarine, cold

Zest of 1–2 oranges

1½ cups raisins

2 cups amasi or buttermilk

½ cup freshly squeezed orange juice

2 tsp vanilla essence (optional)

3 large eggs (1 reserved for egg wash)


Instructions

1. Preheat oven to 375°F and line baking trays.

2. Mix flour, baking powder, and sugar.

3. Rub margarine into flour until crumbly.

4. Stir in orange zest and raisins.

5. Whisk amasi, orange juice, vanilla, and 2 eggs.

6. Combine wet and dry ingredients gently.

7. Shape dough and cut scones.

8. Brush with egg wash.

9. Bake 18–22 minutes until golden.

Notes

Keep margarine cold.

Do not overmix the dough.

Best served warm with butter or jam.
