This Grandma-inspired Orange Creamsicle Loaf Cake is moist, citrusy, and nostalgic. Fresh orange juice, zest, and a tender crumb make it perfect for brunch, dessert, or snacking!
Ingredients
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
⅓ cup sour cream
¼ cup orange juice
1 teaspoon orange zest
Instructions
1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
2. Whisk together flour, baking powder, and salt in a small bowl.
3. Cream butter and sugar until light and fluffy, about 3 minutes.
4. Add eggs one at a time, beating well after each addition.
5. Mix in sour cream, orange juice, and zest until smooth.
6. Fold in dry ingredients gently until just combined—do not overmix.
7. Pour batter into prepared loaf pan and smooth the top.
8. Bake for 45–50 minutes, or until a toothpick comes out clean.
9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
