Description
A classic Kentucky-style pie made with whisked egg whites, graham cracker crumbs, sweetened coconut, and pecans, baked until the top forms a crisp golden crust.
Ingredients
1 (9-inch) unbaked pie crust
7 large egg whites
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
1 1/2 cups graham cracker crumbs
1 1/2 cups sweetened flaked coconut
1 1/2 cups finely chopped pecans
1/4 teaspoon salt
For serving: sweetened whipped cream (optional)
Instructions
1. Preheat the oven to 350°F. Place the unbaked pie crust in a 9-inch pie plate.
2. In a large bowl, whisk the egg whites, sugar, and vanilla until combined.
3. Fold in the graham cracker crumbs, coconut, pecans, and salt until evenly mixed.
4. Pour the filling into the unbaked pie crust and spread it out evenly.
5. Bake for 40 to 45 minutes, until a golden crust forms on top.
6. Cool the pie on a wire rack for 2 hours before slicing and serving.
Notes
Based on the classic sawdust pie recipe published widely from Patti’s 1880 Settlement in Kentucky. Check the oven temperature and timing in your oven, since the source snippet did not list the temperature.
No mixer is needed. Mixing by hand with a spoon works well.
