Description

Soft Old-Fashioned Amish Pineapple Cookies filled with sweet crushed pineapple and cozy farmhouse flavor.


Ingredients

Scale

1/2 cup shortening

1/2 cup brown sugar

1/2 cup granulated sugar

1 egg

2 cups flour

1 tsp baking powder

1 cup crushed pineapple drained


Instructions

1. Preheat oven to 350°F and line baking sheets.

2. Cream shortening brown sugar and sugar until fluffy.

3. Add egg and mix well.

4. Whisk flour and baking powder together.

5. Mix dry ingredients into wet mixture.

6. Fold in drained crushed pineapple.

7. Drop spoonfuls onto baking sheet.

8. Bake 10–12 minutes until edges are lightly golden.

Notes

Drain pineapple well before mixing.

Do not overbake to keep cookies soft.

Add nuts or coconut for extra texture.
