Description

These oatmeal fudge bars are soft, chewy, and completely irresistible. Made with a buttery oatmeal base and a rich, gooey chocolate fudge layer, they’re perfect for dessert, snacks, or sharing with friends and family.


Ingredients

For the Oatmeal Layers:

1 cup unsalted butter, softened

2 cups brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups old-fashioned oats

For the Fudge Layer:

1 (14-ounce) can sweetened condensed milk

2 cups semi-sweet chocolate chips

2 tablespoons unsalted butter

1 teaspoon vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.

2. In a large bowl, cream butter and brown sugar until light and fluffy.

3. Beat in eggs and vanilla extract until well combined.

4. Add flour, baking soda, and salt and mix until just combined.

5. Stir in old-fashioned oats.

6. Press two-thirds of the oatmeal mixture evenly into the prepared pan.

7. Bake for 12–15 minutes until lightly set.

8. In a saucepan over low heat, combine sweetened condensed milk, chocolate chips, and butter, stirring until melted and smooth.

9. Remove from heat and stir in vanilla extract and salt.

10. Spread fudge mixture evenly over the baked oatmeal base.

11. Crumble the remaining oatmeal mixture over the fudge layer.

12. Return to oven and bake for 18–22 minutes until the top is lightly golden.

13. Allow bars to cool completely before slicing.

Notes

Do not overbake to keep the fudge layer gooey.

Use old-fashioned oats for the best chewy texture.

Cool completely before cutting for clean slices.
