Description

A nutritious oat cake made with bananas and carrots. Naturally sweet, moist, and perfect for breakfast or snack.


Ingredients

Scale

2 ripe bananas

2 medium grated carrots

2 eggs

120g oat flakes or oat flour

60ml vegetable oil or coconut oil

60ml milk or plant milk

1 teaspoon baking powder

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 180°C and grease cake pan.

2. Mash bananas in a bowl.

3. Add eggs and whisk together.

4. Stir in grated carrots.

5. Add oil, milk, and vanilla extract.

6. Mix in oats, baking powder, cinnamon, and salt.

7. Pour batter into pan.

8. Bake for 30 to 35 minutes until toothpick comes out clean.

Notes

Use ripe bananas for natural sweetness.

Add walnuts or raisins for extra texture.

Store leftovers in refrigerator for up to 5 days.
