Description
A soft and moist carrot cake made without flour or refined sugar. Naturally sweet and wholesome.
Ingredients
Scale
1 1/2 cups grated carrots
2 eggs
1/2 cup almond flour
1/4 cup honey or mashed dates
1/2 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
pinch of salt
Instructions
1. Preheat oven to 350ยฐF
2. Grate carrots finely
3. Mix eggs, vanilla, and sweetener
4. Add almond flour, baking soda, cinnamon, and salt
5. Fold in carrots
6. Bake for 30โ35 minutes
7. Cool before serving
Notes
Use finely grated carrots
Do not overmix
Let cool completely
