Description

Creamy and soft no-flour peach Greek yogurt oat cake made with juicy peaches, wholesome oats, and naturally sweet ingredients.

Ingredients

Scale

2 cups rolled oats

2 ripe peaches diced

1 cup plain Greek yogurt

2 eggs

1 ripe banana or 1/2 cup applesauce

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking powder

1/4 tsp salt

Instructions

1. Preheat oven to 350°F (175°C) and lightly grease an 8-inch baking pan.

2. Blend rolled oats into a fine oat flour texture.

3. Dice peaches and reserve a few slices for topping.

4. In a large bowl, whisk together Greek yogurt, eggs, mashed banana, and vanilla extract.

5. Add oat flour, cinnamon, baking powder, and salt.

6. Mix until fully combined.

7. Fold diced peaches gently into the batter.

8. Pour batter into prepared pan and smooth the top.

9. Arrange reserved peach slices on top.

10. Bake for 35–40 minutes until golden and center is set.

11. Allow cake to cool for 10–15 minutes before slicing and serving.

Notes

Use ripe peaches for the sweetest flavor.

Full-fat Greek yogurt gives the richest texture.

Do not overbake to keep the cake moist.

Delicious served warm, chilled, or with extra yogurt on top.
