Description

A soft and wholesome oat cake made with yogurt, fruits, and nuts. No flour, no refined sugar, and perfect for healthy snacking, breakfast, or meal prep.


Ingredients

2 cups rolled oats

2 large eggs

1 cup plain yogurt

2 ripe bananas, mashed

1 apple, diced

1/4 cup raisins

1/4 cup chopped walnuts

1 tsp cinnamon

1 tsp vanilla extract

1 tsp baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F (180°C) and lightly grease or line an 8×8-inch baking dish.

2. Blend or pulse oats slightly if you prefer a softer texture.

3. In a large bowl, mix yogurt, eggs, mashed bananas, and vanilla until smooth.

4. Add oats, cinnamon, baking powder, and salt. Stir until combined.

5. Fold in diced apple, raisins, and chopped walnuts.

6. Pour batter into prepared baking dish and spread evenly.

7. Bake for 35–40 minutes until golden and set in the center.

8. Allow cake to cool slightly before slicing and serving.

Notes

Use very ripe bananas for natural sweetness.

Toast walnuts before adding for deeper flavor.

You can swap raisins for dates or dried cranberries.

Store refrigerated for up to 5 days.
