Description

This No-Flour Apple Pie Greek Yogurt Oat Cake is soft, moist, and packed with cozy apple pie flavor. Made with wholesome oats, creamy Greek yogurt, fresh apples, and warm cinnamon, it tastes like a bakery dessert while being nutritious enough for breakfast.


Ingredients

2 cups rolled oats

1 cup plain Greek yogurt

2 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 medium apples, peeled and diced

2 tablespoons chopped walnuts (optional)

Optional Apple Pie Topping:

1 tablespoon maple syrup

1/2 teaspoon cinnamon

Thin apple slices for garnish


Instructions

1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan or 8×8-inch baking pan and line with parchment paper.

2. Place rolled oats into a blender or food processor and blend until flour-like.

3. In a large bowl whisk together Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.

4. Add blended oats, baking powder, cinnamon, nutmeg, and salt. Stir until combined.

5. Fold in diced apples and walnuts if using.

6. Spread batter evenly into prepared pan.

7. Arrange thin apple slices on top if desired.

8. Bake for 32 to 35 minutes or until golden brown and a toothpick comes out clean.

9. Allow cake to cool in the pan for 10 minutes.

10. Brush the top with maple syrup and sprinkle with cinnamon while warm.

11. Slice into 8 servings and serve.

Notes

Honeycrisp, Fuji, Gala, or Pink Lady apples work best.

For a gluten-free version, use certified gluten-free oats.

Store covered in the refrigerator for up to 5 days.
