Description
These no-bake espresso walnut date balls are rich, naturally sweet, and taste like coffee truffles. A quick, healthy snack packed with energy and bold espresso flavor.
Ingredients
1 1/2 cups pitted Medjool dates
1 cup walnuts
1 tablespoon instant espresso powder
1 tablespoon cocoa powder (optional)
1 teaspoon vanilla extract
1–2 tablespoons brewed espresso or coffee
Pinch of salt
Instructions
1. Add dates and walnuts to food processor and blend until crumbly.
2. Add espresso powder, cocoa, vanilla, and salt.
3. Blend again until combined.
4. Add brewed coffee gradually until mixture sticks.
5. Roll into small balls.
6. Chill for 15 minutes or serve immediately.
Notes
Use soft dates for best results.
Soak dates if dry.
Adjust espresso strength to taste.
Store in fridge for best texture.
