Description

Easy no-bake turtle candies made by stirring toasted pecans into melted soft caramel and semi-sweet chocolate, dropping the mixture into clusters and chilling until set.

Ingredients

Scale

3 cups pecan halves

16 soft caramel squares (about 4 1/2 ounces), unwrapped

2 tablespoons heavy cream

1 cup semi-sweet chocolate chips (about 6 ounces)

Flaky sea salt, for sprinkling

Instructions

1. Line two baking sheets with parchment paper or wax paper.

2. In a large microwave-safe bowl, combine the caramel squares and heavy cream. Microwave in 30-second intervals, stirring after each, until the caramel is completely melted and smooth, about 1 1/2 minutes.

3. In a separate microwave-safe bowl, microwave the chocolate chips in 30-second bursts, stirring between each, until melted and smooth.

4. Pour the melted chocolate over the caramel and add the pecan halves. Stir gently with a spatula until the pecans are coated and the caramel makes swirls through the chocolate. Do not overmix.

5. Working quickly, drop heaping tablespoons of the mixture onto the lined baking sheets, spacing them about 1 inch apart, using a second spoon to nudge a few pecans onto the top of each cluster.

6. Sprinkle each cluster with a few flakes of sea salt.

7. Refrigerate for 20 to 30 minutes, or let stand at room temperature until firm.

Notes

Based on the common no-bake turtle cluster method (pecans stirred into melted caramel and chocolate, dropped onto parchment), including the published ratio of soft caramels to cream (25 caramels to 1/4 cup cream) and the 30-second microwave intervals. The amounts, chilling time and yield (24 clusters) were developed for Poulef to match the photos. It is untested, so test one batch before publishing.

For deeper pecan flavor, toast the pecans in a dry skillet over medium heat for 4 to 5 minutes, then cool completely.

Do not microwave the chocolate or caramel for longer than 30 seconds at a time, since both scorch easily.

Yield (24 clusters) and nutrition are estimates.
