Description
Soft and healthy no-bake carrot cake breakfast bars with oats, natural sweetness, and a creamy topping.
Ingredients
1 cup rolled oats
1/2 cup grated carrots
1/2 cup almond butter
1/4 cup honey or maple syrup
1/4 cup milk
1/2 tsp cinnamon
1/2 tsp vanilla extract
Pinch of salt
Frosting:
1/2 cup Greek yogurt or cream cheese
2 tbsp honey
1/2 tsp vanilla
Instructions
1. Mix almond butter, honey, milk, and vanilla
2. Add oats, carrots, cinnamon, and salt
3. Mix until combined
4. Press into lined pan
5. Mix frosting ingredients
6. Spread frosting on top
7. Chill 1-2 hours
8. Slice and serve
Notes
Chill fully before cutting
Use fine grated carrots
Adjust sweetness as needed
