Description

This Date Loaf (Dairy-Free, Egg-Free) is the ultimate moist, naturally sweet treat! Filled with juicy dates and warm flavor, it’s a wholesome bake made without dairy, eggs, or refined sugar — perfect for tea time or breakfast.


Ingredients

1 cup Deglet Noor dates, chopped

1 cup boiling water

½ teaspoon baking soda

¼ cup avocado oil (or light olive oil)

1 cup all-purpose flour (or whole wheat pastry flour)

1 teaspoon baking powder

¼ teaspoon salt

⅓ cup brown sugar or coconut sugar

½ teaspoon ground cinnamon

1 teaspoon vanilla extract

2 tablespoons unsweetened applesauce

2 tablespoons plant-based milk (almond or oat)


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.

2. Combine chopped dates and baking soda in a bowl, pour boiling water over them, and let sit for 10 minutes to soften.

3. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.

4. Add avocado oil, applesauce, vanilla extract, and plant-based milk to the dry ingredients. Mix gently.

5. Fold in the softened date mixture (including the liquid) until just combined.

6. Pour batter into prepared pan and smooth the top.

7. Bake for 45–50 minutes, or until golden brown and a skewer inserted in the center comes out clean.

8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

This loaf’s flavor deepens overnight — slice it the next day for the perfect texture and taste.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
