Description
A rich, moist molasses ginger cake filled with sweet dates, warm spices, and deep caramel flavor for the ultimate cozy dessert.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup molasses
2 large eggs
3/4 cup milk
1 cup pitted dates, chopped
1 tsp vanilla extract
Instructions
1. Preheat oven to 175°C (350°F) and grease a loaf pan.
2. Place chopped dates in hot water and let them soften for 10 minutes.
3. In a bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, and salt.
4. In another bowl, cream butter and brown sugar until light and fluffy.
5. Mix in molasses and eggs one at a time.
6. Add vanilla extract and mix well.
7. Alternate adding dry ingredients and milk into wet mixture until just combined.
8. Fold in softened dates along with a small amount of their soaking liquid.
9. Pour batter into prepared pan.
10. Bake for 50–60 minutes or until a toothpick comes out clean.
11. Let cool before slicing.
Notes
Best flavor develops after 24 hours.
Serve warm with butter or whipped cream.
You can add chopped walnuts for extra crunch.
Store in airtight container for up to 5 days.
