Description

A tender, one-bowl butter cake with crushed pineapple and desiccated coconut baked into a soft, moist, tropical crumb.

Ingredients

Scale

150 g (2/3 cup) butter, melted

1 cup (200 g) granulated sugar

2 large eggs

1 cup (about 180 g) crushed pineapple, well drained

1/2 cup (about 45 g) desiccated (shredded) coconut

1 1/2 cups (about 190 g) plain (all-purpose) flour

1 1/2 teaspoons baking powder

1 teaspoon vanilla extract

Pinch of salt

Instructions

1. Preheat the oven to 170°C (340°F) fan-forced, or 190°C (375°F) conventional. Grease and line a 20 cm (8-inch) round cake tin with parchment paper.

2. In a large bowl, whisk the melted butter and sugar together until combined.

3. Whisk in the eggs one at a time, then stir in the vanilla.

4. Stir in the drained crushed pineapple and the desiccated coconut.

5. Sift the flour, baking powder, and salt over the mixture and fold gently until just combined and no dry flour remains.

6. Pour the batter into the prepared tin and smooth the top.

7. Bake for about 40 minutes, until the top is golden and a skewer inserted in the center comes out clean.

8. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely. Cut into 10 slices.

Notes

Based on the Pineapple and Coconut Cake published by VJ Cooks (150 g melted butter, 1 cup sugar, 2 eggs, 1 cup drained crushed pineapple, 1/2 cup desiccated coconut, 1 1/2 cups plain flour, 1 1/2 teaspoons baking powder, and a bake at 170°C fan-forced for about 40 minutes are from the source). The vanilla, the salt, the 20 cm round tin, the mixing method, the cup to gram flour conversion, the conventional oven equivalent, the cooling time, and the yield of 10 slices are estimates, and the recipe has not been tested.

Drain the pineapple well, pressing it gently in a sieve, so the batter is not too wet.

Do not overmix after adding the flour, to keep the cake tender.
