Ingredients
For the Cake:
3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 large eggs
1 1/2 cups vegetable oil
2 teaspoons vanilla extract
3 cups peeled and diced apples
1 cup chopped pecans or walnuts
For the Brown Sugar Glaze:
1/2 cup unsalted butter
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1/4 cup heavy cream or whole milk
1 teaspoon vanilla extract
Pinch of salt
Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper if desired.
2. In a large bowl, whisk together the flour, granulated sugar, baking soda, cinnamon, nutmeg, and salt.
3. Add the eggs, vegetable oil, and vanilla extract. Stir until the ingredients are evenly combined.
4. Fold in the diced apples and chopped pecans or walnuts until evenly distributed throughout the batter.
5. Spread the thick batter evenly into the prepared baking pan.
6. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
7. While the cake is baking, combine the butter, brown sugar, granulated sugar, and heavy cream in a small saucepan.
8. Heat over medium heat, stirring until the butter melts and the sugar dissolves.
9. Bring the glaze to a gentle simmer and cook for about 2 minutes.
10. Remove the glaze from the heat and stir in the vanilla extract and salt.
11. Let the baked cake cool for about 10 minutes.
12. Use a skewer or fork to make small holes across the surface of the warm cake.
13. Slowly pour the warm brown sugar glaze over the cake, allowing it to soak into the surface.
14. Let the cake cool slightly before slicing and serving.
Notes
Use firm baking apples such as Granny Smith, Honeycrisp, Pink Lady, Braeburn, Fuji, or Gala.
Dice the apples into small pieces so they distribute evenly throughout the cake.
Do not overmix the batter once the flour is incorporated.
Toast the pecans or walnuts before adding them for extra flavor.
Start checking the cake at 45 minutes to prevent overbaking.
Pour the glaze slowly over the warm cake so it absorbs evenly.
Serve warm with vanilla ice cream for an extra-special dessert.
