  • 2 cups cottage cheese
  • 3 large eggs
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup cornstarch
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 1½ cups mixed berries, fresh or frozen
  • 1 teaspoon lemon zest
  • Optional: ½ cup fresh mixed berries for topping
  • Optional: 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Blend the cottage cheese until smooth and creamy.
  3. Add the eggs, sugar, vanilla, cornstarch, baking powder, salt, and lemon zest. Blend until smooth.
  4. Transfer the batter to a bowl and gently fold in the mixed berries.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 45–55 minutes, until the edges are set and the center is mostly firm.
  7. Cool in the pan for about 1 hour, then refrigerate for at least 2 hours.
  8. Remove from the pan, garnish if desired, slice, and serve chilled.

Notes

  • Use plain cottage cheese and blend it until smooth.
  • Fold frozen berries into the batter without thawing.
  • The cake will firm up as it cools and chills.
  • Store covered in the refrigerator for up to 4 days.
