Description

This 90-second Mediterranean mug bread is fluffy, savory, and packed with Greek yogurt, olive oil, oregano, and garlic for a quick healthy bread that keeps you full and energized.


Ingredients

Scale

4 tbsp oat flour

2 tbsp almond flour

1/4 tsp baking powder

1/4 tsp garlic powder

1/2 tsp dried oregano

Pinch of salt

1 egg

2 tbsp plain Greek yogurt

1 tbsp olive oil

1 tbsp crumbled feta cheese (optional)

1 tbsp chopped sun-dried tomatoes (optional)


Instructions

1. In a microwave-safe mug or ramekin, whisk together oat flour, almond flour, baking powder, garlic powder, oregano, and salt.

2. Add egg, Greek yogurt, and olive oil. Stir until smooth.

3. Fold in feta cheese and sun-dried tomatoes if using.

4. Microwave on high for 90 seconds until bread is fluffy and cooked through.

5. Allow to cool for 1 minute before slicing and serving.

Notes

Do not overcook or bread may become rubbery.

Use thick Greek yogurt for best texture.

Fresh herbs can be added for extra flavor.

Best served warm.
