Description

Soft, fluffy cottage cheese muffins naturally sweetened with maple syrup and filled with crunchy walnuts. A delicious high-protein breakfast or snack.


Ingredients

1/2 cup chopped walnuts

1/2 cup cottage cheese

1 cup oat flour

2 eggs

1/4 cup maple syrup

1/2 cup milk

1 teaspoon baking powder

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and prepare a muffin tin.

2. Blend cottage cheese, eggs, maple syrup, milk, and vanilla until smooth.

3. Mix in oat flour and baking powder until just combined.

4. Fold in chopped walnuts.

5. Divide batter evenly among muffin cups.

6. Sprinkle extra walnuts on top.

7. Bake for 20–25 minutes until golden and cooked through.

8. Cool before serving.

Notes

Blend the cottage cheese for the smoothest muffins.

Toast the walnuts for extra flavor.

Store in the refrigerator for up to 5 days or freeze for up to 3 months.
