Ingredients
1 cup cottage cheese (blended until smooth)
2 large eggs
1/4 cup maple syrup (or honey)
1 cup oat flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
1 tbsp melted butter or coconut oil
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners.
2. Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
3. In a separate bowl, whisk oat flour, baking powder, baking soda, and salt.
4. Combine wet and dry ingredients. Mix until just combined, then fold in melted butter.
5. Divide batter into muffin cups and bake for 18–20 minutes until golden. Cool slightly.
6. Drizzle with a simple glaze made from 1/4 cup powdered sugar and 1 tbsp maple syrup.
Notes
These muffins taste best warm! Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat in the microwave for 10–15 seconds before enjoying.
