Description

Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

½ cup brown sugar, packed

⅓ cup pure maple syrup

½ cup milk

⅓ cup vegetable oil or melted butter

1 large egg

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 375°F (190°C) and line a muffin tin.

2. In a large bowl, combine oats and milk and let soak for 10 minutes.

3. Whisk in brown sugar, maple syrup, oil, egg, and vanilla.

4. In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

5. Add dry ingredients to wet ingredients and stir gently until combined.

6. Divide batter evenly into muffin cups.

7. Bake for 18–22 minutes until set and lightly golden.

8. Cool slightly before serving.

Notes

Soaking the oats ensures soft muffins.

Do not overmix the batter.
