Description

These Low-Sugar Vanilla Almond Cookies are buttery, soft, and diabetic-friendly! Sweetened with erythritol or monk fruit, they’re the perfect guilt-free treat.


Ingredients

8 oz unsalted butter, softened

1/3 cup erythritol or monk fruit sweetener (granulated)

1/4 tsp salt

1 1/2 tsp pure vanilla extract

1 large egg yolk

1 3/4 cups almond flour (or a mix of 1 cup almond + 3/4 cup whole wheat flour for texture)


Instructions

1. Beat butter and erythritol until fluffy.

2. Mix in vanilla and egg yolk.

3. Fold in almond flour until dough forms.

4. Shape into balls, flatten slightly on parchment-lined sheet.

5. Bake at 350°F (175°C) for 10–12 minutes.

6. Cool on a rack before serving.

Notes

Optional: Add sugar-free chocolate chips or sliced almonds before baking.
