Description

This Low-Carb Cottage Cheese Pizza features a soft, cheesy, high-protein crust made with cottage cheese, eggs, and mozzarella. It’s naturally gluten-free, low in carbs, and perfect for healthy pizza nights, meal prep, or satisfying your pizza cravings without the guilt.

For the Pizza Crust:

1 cup cottage cheese

2 large eggs

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1/4 teaspoon black pepper

1/4 teaspoon salt

2 tablespoons almond flour (optional)

For the Toppings:

1/2 cup sugar-free pizza sauce

1 cup shredded mozzarella cheese

Pepperoni slices (optional)

Sliced mushrooms

Bell peppers

Red onion

Black olives

Fresh basil leaves


Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet or pizza pan with parchment paper.

2. Blend the cottage cheese and eggs in a blender or food processor until smooth.

3. Transfer the mixture to a bowl and stir in the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, pepper, and almond flour if using.

4. Spread the mixture into a 10-inch circle on the prepared baking sheet.

5. Bake for 20 to 25 minutes until the crust is golden and firm.

6. Remove from the oven and spread the pizza sauce evenly over the crust.

7. Top with mozzarella cheese and your favorite toppings.

8. Return to the oven and bake for another 8 to 10 minutes until the cheese is melted and bubbly.

9. Let the pizza cool for 5 minutes before slicing and serving.
