Ingredients
For the Crust:
2 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
3/4 cup unsalted butter, melted
For the Limoncello Filling:
8 ounces cream cheese, softened
1 cup sweetened condensed milk
1/2 cup limoncello
1/4 cup fresh lemon juice
Zest of 1 lemon
1 teaspoon vanilla extract
1 cup heavy whipping cream

Instructions
1. Combine the graham cracker crumbs and granulated sugar in a bowl.
2. Pour in the melted butter and stir until the mixture resembles damp sand.
3. Press the crust firmly into the bottom and slightly up the sides of a 9-inch pie dish.
4. Refrigerate the crust for at least 20 minutes while preparing the filling.
5. Beat the softened cream cheese in a large bowl until smooth and creamy.
6. Add the sweetened condensed milk and mix until completely combined.
7. Add the limoncello, fresh lemon juice, lemon zest, and vanilla extract. Mix until smooth.
8. In a separate bowl, whip the heavy cream until soft peaks form.
9. Gently fold the whipped cream into the lemon mixture until evenly incorporated.
10. Spoon the filling into the chilled graham cracker crust and smooth the top.
11. Cover the pie and refrigerate for at least 6 hours, preferably overnight, until firm and sliceable.
12. Before serving, garnish with whipped cream, lemon zest, lemon slices, fresh berries, or mint.
13. Slice and serve chilled.
