Description

This Protein-Packed Lemon Poppy Seed Oat Loaf is incredibly moist, bright with fresh lemon flavor, and packed with protein from Greek yogurt, eggs, and protein powder. Made with wholesome oats and bursting with citrus goodness, it’s perfect for breakfast, snacks, or a healthier dessert.


Ingredients

For the Loaf:

2 cups (180 g) rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 tablespoons poppy seeds

1 scoop (30 g) vanilla protein powder

2 large eggs

1 cup (240 g) plain Greek yogurt

1/3 cup (80 ml) milk of choice

1/4 cup (60 ml) maple syrup or honey

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

Optional Lemon Glaze:

1/2 cup powdered sweetener

1 tablespoon fresh lemon juice


Instructions

1. Preheat oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan.

2. Blend the rolled oats into a fine oat flour using a blender or food processor.

3. In a large bowl whisk together oat flour, baking powder, baking soda, salt, poppy seeds, and vanilla protein powder.

4. In a separate bowl whisk together eggs, Greek yogurt, milk, maple syrup or honey, lemon juice, lemon zest, and vanilla extract.

5. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.

6. Allow the batter to rest for 5 minutes so the oats can absorb moisture.

7. Pour the batter into the prepared loaf pan and spread evenly.

8. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.

9. Allow the loaf to cool in the pan for 15 minutes before transferring to a wire rack.

10. If desired, whisk together powdered sweetener and lemon juice to make the glaze and drizzle over the cooled loaf.

11. Slice and serve.

Notes

Fresh lemon juice and zest provide the brightest flavor.

Do not overmix the batter to keep the loaf tender.

Allowing the batter to rest improves the texture.

Vanilla protein powder adds sweetness and extra protein.
