Ingredients
2½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons poppy seeds
1 cup granulated sugar
½ cup unsalted butter
2 eggs
1 cup sour cream
2 tablespoons lemon zest
¼ cup fresh lemon juice
1 teaspoon vanilla extract
1½ cups powdered sugar
2–3 tablespoons lemon juice for glaze
Instructions
1. Preheat oven to 350°F and grease the donut cake pan.
2. Whisk together the flour, baking powder, baking soda, salt, and poppy seeds.
3. Beat butter and sugar until fluffy.
4. Mix in eggs one at a time.
5. Add sour cream, lemon zest, lemon juice, and vanilla.
6. Fold in the dry ingredients until combined.
7. Transfer batter to the prepared pan.
8. Bake for 30–38 minutes.
9. Cool for 10 minutes before removing from pan.
10. Whisk together the glaze ingredients and drizzle over the cooled cake.
Notes
Do not overmix the batter.
Use fresh lemons for the best flavor.
Allow the cake to cool before glazing.
Store covered for up to 3 days.
