Description

A soft, moist Lemon Pistachio Cake bursting with bright citrus flavor, rich buttery crumb, and crunchy pistachios, finished with optional lemon syrup and glaze.


Ingredients

1½ cups (190 g) all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup (170 g) unsalted butter, softened

1 cup (200 g) granulated sugar

3 large eggs

1 tbsp fresh lemon zest

2 tbsp fresh lemon juice

½ cup (120 ml) buttermilk or whole milk

1 tsp vanilla extract

¾ cup (90 g) shelled pistachios, chopped

Optional Lemon Syrup:

¼ cup fresh lemon juice

¼ cup granulated sugar

Optional Lemon Glaze:

1 cup powdered sugar

23 tbsp fresh lemon juice


Instructions

1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan or 9×5-inch loaf pan.

2. Whisk together flour, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, cream butter and sugar for 3–4 minutes until light and fluffy.

4. Add eggs one at a time, mixing well after each addition.

5. Mix in lemon zest, lemon juice, and vanilla extract.

6. Add dry ingredients in three additions, alternating with buttermilk. Mix until just combined.

7. Gently fold in chopped pistachios, reserving a small amount for topping.

8. Pour batter into prepared pan and smooth the top.

9. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

10. While cake is still warm, prepare lemon syrup by dissolving sugar into lemon juice and brush over cake.

11. Let cake cool slightly before drizzling with optional lemon glaze.

12. Sprinkle remaining pistachios on top and serve.

Notes

Use room temperature butter and eggs for best texture.

Do not overmix after adding flour to keep the cake light.

Lemon syrup keeps the cake extra moist and flavorful.

Pistachios can be replaced with almonds or walnuts if desired.

Store covered at room temperature for up to 4 days or refrigerate for 6 days.
