Description

Soft lemon muffins bursting with citrus flavor from fresh lemon zest and finished with a sweet lemon syrup glaze.


Ingredients

Scale

1 3/4 cups all purpose flour

3/4 cup granulated sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons lemon zest

2 eggs

1/2 cup sour cream

1/3 cup vegetable oil

1/4 cup lemon juice

1 teaspoon vanilla extract

1/4 cup lemon juice for syrup

3 tablespoons sugar for syrup


Instructions

1. Preheat oven to 375°F and line a muffin tin with paper liners

2. Whisk flour sugar baking powder baking soda salt and lemon zest in a bowl

3. In another bowl whisk eggs sour cream oil lemon juice and vanilla

4. Combine wet and dry ingredients gently

5. Fill muffin cups 3/4 full with batter

6. Bake for 18 to 22 minutes until a toothpick comes out clean

7. Heat lemon juice and sugar to make syrup

8. Brush warm muffins with lemon syrup before serving

Notes

Use fresh lemon zest for best flavor

Do not overmix batter

Brush syrup onto muffins while warm for maximum flavor
