These Lemon Crumb Bars feature a buttery oatmeal crust and crumble topping with a smooth, tangy lemon filling made from sweetened condensed milk and fresh lemon juice. Bright, easy, and irresistible.
Ingredients
Oat Crust & Crumble:
1 cup quick-cooking oats
1½ cups all-purpose flour
1 cup light brown sugar, packed
¼ teaspoon baking soda
¼ teaspoon baking powder
¾ cup unsalted butter, melted
Lemon Filling:
1 (14 oz) can sweetened condensed milk
½ cup freshly squeezed lemon juice
2 large egg yolks
1 teaspoon lemon zest
⅛ teaspoon kosher salt
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan.
2. Mix oats, flour, brown sugar, baking soda, and baking powder.
3. Stir in melted butter until crumbly.
4. Press two-thirds of mixture into pan and bake 12–15 minutes.
5. Whisk condensed milk, lemon juice, egg yolks, zest, and salt.
6. Pour filling over crust and sprinkle remaining crumbs on top.
7. Bake 22–25 minutes until set.
8. Cool completely, then chill before slicing.
Notes
Use fresh lemon juice for best flavor.
Chill before cutting for clean slices.
Bars store well and taste even better the next day.
Dust with powdered sugar before serving if desired.
