Ingredients

2 large eggs

Zest of 2 lemons

1/2 cup fresh lemon juice

3/4 cup coconut milk

1/2 cup shredded coconut

1/2 cup chopped pistachios

For the Lemon Coconut Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

2 tablespoons coconut milk


Instructions

1. Preheat the oven to 350°F (175°C) and grease or line an 8-inch round cake pan with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a separate large bowl, beat the butter and sugar until light and fluffy.

4. Beat in the eggs one at a time, then mix in the vanilla extract, lemon zest, and fresh lemon juice.

5. Gradually add the dry ingredients alternately with the coconut milk, mixing just until combined.

6. Fold in the shredded coconut and chopped pistachios.

7. Pour the batter into the prepared pan and smooth the top.

8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

9. Cool the cake completely on a wire rack.

10. Whisk together the powdered sugar, lemon juice, and coconut milk until smooth, then pour over the cooled cake.

11. Garnish with extra chopped pistachios, lemon zest, and shredded coconut before serving.

Use fresh lemons for the brightest citrus flavor.

Do not overmix the batter to keep the cake light and tender.
