Description

This Lazy Old-Fashioned Pineapple Carrot Church Cake is an incredibly moist vintage cake made with crushed pineapple, grated carrots, warm spices, and creamy vanilla frosting.


Ingredients

Scale

2 cups all-purpose flour

2 cups sugar

1 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

3 eggs

1 cup vegetable oil

2 cups grated carrots

1 can crushed pineapple

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and grease a 9×13 baking pan

2. Mix flour, sugar, baking powder, baking soda, salt, and cinnamon

3. Add eggs, oil, and vanilla and mix until smooth

4. Fold in grated carrots and crushed pineapple

5. Spread batter in pan

6. Bake 35–40 minutes until done

7. Cool completely

8. Frost with cream cheese frosting

Notes

Fresh grated carrots give best texture

Do not overmix batter

Cake tastes even better next day

Store in refrigerator up to 5 days
