Description

A soft and cozy Lazy Amish Pineapple Coconut Cake made with yellow cake mix, sweet pineapple, and toasted coconut. Simple, moist, and full of tropical flavor.


Ingredients

1 box yellow cake mix

1 can (20 oz) crushed pineapple, drained

1 cup sweetened shredded coconut

3 eggs

1/2 cup vegetable oil

1/2 cup sour cream or Greek yogurt

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish

2. In a large bowl combine yellow cake mix, eggs, vegetable oil, sour cream, and vanilla extract

3. Stir in the drained crushed pineapple and shredded coconut

4. Mix until fully combined but do not overmix

5. Spread the batter evenly into the prepared baking dish

6. Bake for 30–35 minutes until golden and a toothpick inserted in the center comes out clean

7. Let cool slightly before slicing and serving

Notes

Drain pineapple well to prevent the cake from becoming too wet

For extra flavor sprinkle additional coconut on top before baking

Serve warm with whipped cream or vanilla ice cream
