Description

A creamy Lazy Amish Pineapple Cheesecake Cake with buttery yellow cake, rich cheesecake filling, and sweet pineapple. Perfect for holidays, potlucks, or family dessert.


Ingredients

Cake:

1 box (15.25 oz) yellow cake mix

3 large eggs

1/2 cup melted butter

1/2 cup whole milk

Cheesecake Layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Pineapple Layer:

1 can (20 oz) crushed pineapple, well drained


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Mix the cake mix, eggs, butter, and milk until smooth.

3. Spread two-thirds of the batter into the pan.

4. Beat the cream cheese, sugar, egg, and vanilla until smooth, then spread over the batter.

5. Top with the drained crushed pineapple.

6. Drop spoonfuls of the remaining batter over the pineapple.

7. Bake for 45–55 minutes, cool completely, and chill before serving.

Notes

Drain the pineapple thoroughly.

Use room-temperature cream cheese.

Chill before slicing for the best texture.
