Description
Soft and chewy keto fathead sugar cookies made with almond flour and mozzarella cheese. Low carb, sugar free, and incredibly delicious.
Ingredients
1 1/2 cups shredded mozzarella cheese
2 tbsp cream cheese
1 cup almond flour
1/3 cup powdered erythritol
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
Instructions
1. Preheat oven to 180°C and line baking tray.
2. Melt mozzarella and cream cheese until smooth.
3. Mix in almond flour, sweetener, egg, vanilla, and baking powder.
4. Form dough into balls and flatten.
5. Bake for 10–12 minutes until golden.
6. Cool completely before serving.
Notes
Use low moisture mozzarella.
Do not overbake.
Chill dough if sticky.
Cookies firm up after cooling.
