A cozy fall-inspired Keto Apple Cider Donut Cake that’s low-carb, gluten-free, and tastes just like a warm hug in every bite.
Ingredients
2 cups almond flour
1/2 cup erythritol (or preferred sweetener)
1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp nutmeg
1/4 tsp salt
3 large eggs
1/2 cup unsweetened apple cider
1/4 cup melted butter
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F and grease pan.
2. Whisk almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
3. In another bowl, whisk eggs, cider, melted butter, and vanilla.
4. Fold wet ingredients into dry until batter forms.
5. Pour into pan and bake 30–35 minutes.
6. Cool before slicing and optionally dust with cinnamon-erythritol.
Notes
For stronger apple flavor, reduce cider before using.
Store in fridge up to 5 days or freeze for 2 months.
