Traditional Jamaican sweet potato pudding made with coconut milk and warm spices. Rich, dense, and comforting.
Ingredients
Scale
2 cups sweet potato
1 cup coconut milk
1/2 cup brown sugar
1/4 cup condensed milk
1/2 cup flour
butter
cinnamon
nutmeg
Instructions
1. Mix all ingredients.
2. Pour into baking dish.
3. Bake 45 minutes.
4. Add topping.
5. Bake again until set.
Notes
Use full-fat coconut milk.
Do not rush baking.
Let cool before slicing.
