Description
Thanks for being here! Today, I’m thrilled to share my beloved Easy Keto Coconut Cream Pie Dessert — a guilt-free treat that satisfies even the most discerning sweet tooth while keeping those pesky carbs at bay. This recipe is more than just a dessert; it brings back a flood of memories of family gatherings where laughter and indulgence filled the air. Honestly, it’s special to me because it embraces the essence of comfort food while being a fantastic option for anyone following a keto lifestyle or simply looking to enjoy scrumptious low carb desserts.
Ingredients
1 cup almond flour
4 tablespoons unsweetened coconut flakes
1/4 cup coconut oil
2 tablespoons erythritol (or your favorite low carb sweetener)
1 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/2 cup unsweetened coconut milk
2 large eggs
1/4 teaspoon salt
1/2 teaspoon coconut extract
Instructions
Prepare the crust by combining almond flour, coconut flakes, erythritol, and salt in a mixing bowl. Melt the coconut oil and mix it in until well combined.
Press the mixture into a greased 9-inch pie dish and poke holes in the crust to prevent bubbling.
Bake the crust at 350°F (175°C) for 10-12 minutes or until golden brown. Let it cool completely.
Beat the heavy whipping cream until soft peaks form and set aside. In another bowl, whisk together coconut milk, eggs, vanilla extract, and coconut extract.
Gently fold the whipped cream into the coconut mixture until smooth and airy.
Pour the coconut filling into the cooled crust and top with additional coconut flakes if desired.
Chill the pie for at least 2 hours to allow it to set.
Notes
If you want to save time, you can prepare the crust a day ahead and keep it tightly wrapped.
Watch your baking time! Almond flour can burn quickly — keep an eye on it while it’s in the oven.
If your filling is too runny, try adding an extra egg or a tablespoon of coconut flour to thicken it up.
Feel free to double the recipe for larger gatherings or to have leftovers.
