Description
Soft homemade oatmeal cream pies with chewy cookies and fluffy vanilla cream filling.
Ingredients
1 cup butter
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 tbsp molasses
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups rolled oats
For filling:
1/2 cup butter
1 1/2 cups powdered sugar
1 jar marshmallow fluff
1 tsp vanilla
Instructions
1. Preheat oven and line baking sheets.
2. Cream butter and sugars.
3. Add eggs, molasses, and vanilla.
4. Mix in dry ingredients and oats.
5. Bake cookies for 9โ11 minutes.
6. Cool completely.
7. Prepare cream filling.
8. Sandwich filling between cookies.
Notes
Do not overbake cookies. Use room-temperature butter. Chill filling if needed.
