Description

This Homemade Creamy Fuba Cake is a soft Brazilian cornmeal cake with a delicate sweetness and tender crumb. Perfect for breakfast, dessert, or an afternoon coffee break.


Ingredients

2 cups fuba (fine cornmeal)

1 cup wheat flour

1 1/2 cups sugar

3 eggs

1 cup milk

1/2 cup vegetable oil

1 tablespoon baking powder

1 pinch salt

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (180°C) and grease a cake pan

2. Whisk eggs, milk, oil, and vanilla until smooth

3. In another bowl mix fuba, flour, sugar, and salt

4. Combine dry and wet ingredients until smooth

5. Stir in baking powder

6. Pour batter into prepared pan

7. Bake for 35–40 minutes until golden

8. Cool slightly before slicing and serving

Notes

Use fine cornmeal (fuba) for best texture

Do not overmix the batter

Add coconut or parmesan for flavor variations

Store cake in airtight container for up to 3 days
