These homemade butter cookies are light, crispy, crumbly, and melt-in-your-mouth. Perfect for holidays or everyday snacking.
Ingredients
1 cup unsalted butter, softened (226g)
3/4 cup granulated sugar (150g)
1 large egg yolk
2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups + 2 Tbsp all-purpose flour (265g)
Optional: 1 cup dark chocolate chips (170g)
Optional: 1/2 teaspoon vegetable shortening
Instructions
1. Beat softened butter and sugar until light and fluffy.
2. Mix in egg yolk, vanilla extract, and salt.
3. Add flour and gently fold until dough forms.
4. Pipe or shape dough onto a lined baking sheet.
5. Bake at 350°F (175°C) for 10–12 minutes until golden.
6. Optional: dip cooled cookies in melted chocolate and let set.
Notes
Chill dough for 20 minutes if too soft to pipe.
Store in an airtight container for up to 1 week.
Freeze dough or baked cookies for longer storage.
