Description

Fudgy, chewy chocolate brownies made with melted chocolate, brown sugar, and molasses, and spiced with ginger, cinnamon, cloves, and nutmeg for a festive gingerbread flavor.

Ingredients

Scale

1/2 cup (113 g) unsalted butter

4 ounces (113 g) semisweet or bittersweet chocolate, chopped

3/4 cup (150 g) packed brown sugar

1/4 cup (85 g) unsulphured molasses

2 large eggs, at room temperature

1 teaspoon vanilla extract

3/4 cup (95 g) all-purpose flour

2 tablespoons unsweetened cocoa powder

2 teaspoons ground ginger

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup (85 g) semisweet chocolate chips

Powdered sugar, for dusting (optional)

Instructions

1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides.

2. Melt the butter and chopped chocolate together in a saucepan over low heat, stirring until smooth. Remove from the heat and let cool for 5 minutes.

3. Whisk the brown sugar and molasses into the chocolate mixture until smooth. Whisk in the eggs one at a time, then the vanilla, until glossy.

4. In a small bowl, whisk the flour, cocoa powder, ginger, cinnamon, cloves, nutmeg, and salt. Fold into the batter until just combined, then fold in the chocolate chips.

5. Spread the batter evenly in the pan. Bake for 25 to 30 minutes, until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.

6. Cool completely in the pan on a wire rack. Lift out using the parchment, dust with powdered sugar if desired, and cut into 16 squares.

Notes

Original Poulef recipe adapted from published gingerbread brownie recipes (including A Seasoned Greeting, Maria’s Mixing Bowl, and Blackberry Babe) that melt butter and chocolate, then add brown sugar, molasses, eggs, and ginger and cinnamon, and bake at 350°F in a 9×9 pan. The exact amounts were not readable from the sources, so quantities follow standard fudgy brownie proportions, and the recipe has not been tested.

Use unsulphured molasses for a clean, sweet flavor.

Do not overbake, for the fudgiest texture.
