Description

This High Protein Triple Berry Bake is a wholesome, family-friendly breakfast or snack made with cottage cheese, eggs, almond flour, and juicy berries. Naturally gluten-free, lightly sweet, and packed with protein.


Ingredients

Scale

2 cups full-fat cottage cheese

3 large eggs

½ cup almond flour

¼ cup honey or maple syrup (or sugar-free alternative)

1 teaspoon vanilla extract

1 teaspoon lemon zest

1½ cups mixed berries

½ teaspoon baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.

2. Blend cottage cheese, eggs, sweetener, vanilla, and lemon zest until smooth.

3. Transfer to a bowl and whisk in almond flour, baking powder, and salt.

4. Gently fold in mixed berries.

5. Pour batter into baking dish and smooth the top.

6. Bake for 35–40 minutes until center is set.

7. Cool for 10 minutes before slicing and serving.

Notes

Blend cottage cheese well for a smooth texture.

Frozen berries work without thawing.

Bake until just set for best consistency.
