Description
This High Protein Banana Bread is incredibly moist, naturally sweet, and packed with protein to keep you full and energized. Made with ripe bananas, Greek yogurt, protein powder, and oats, it’s perfect for breakfast, meal prep, or a healthy afternoon snack.
Ingredients
2 ripe bananas, mashed
2 large eggs
1/2 cup plain Greek yogurt
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1 cup oat flour
1/2 cup vanilla protein powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
Optional Add-ins:
1/3 cup chopped walnuts
1/4 cup dark chocolate chips
1 tablespoon chia seeds
Instructions
1. Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
2. In a large bowl, mash the bananas until smooth.
3. Whisk in the eggs, Greek yogurt, honey, and vanilla extract until well combined.
4. Add the oat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir until just combined.
5. Fold in the walnuts, chocolate chips, or chia seeds if using.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
9. Slice and enjoy for breakfast, snacks, or post-workout fuel.
Notes
Use very ripe bananas for the sweetest flavor.
Do not overmix the batter to keep the bread tender.
Store at room temperature for up to 3 days or refrigerate for up to 1 week.
Freeze individual slices for up to 3 months.
Delicious served warm with almond butter or peanut butter.
