Description
A moist and healthy Greek yogurt lemon loaf cake made with honey, lemon juice, and coconut oil. Light, fluffy, and perfect for breakfast or dessert.
Ingredients
1 tbsp lemon zest
3 large eggs
1/2 cup honey
1/4 cup lemon juice
2 cups flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1/3 cup coconut oil
1 cup Greek yogurt
Instructions
1. Preheat oven and prepare loaf pan.
2. Mix wet ingredients together.
3. Combine dry ingredients separately.
4. Fold together gently.
5. Bake 40–50 minutes.
6. Cool before slicing.
Notes
Do not overmix batter. Use fresh lemon juice for best flavor.
